Reduced Calorie and Sodium Gypsy Soup

Ingredients
Olive Oil, 1 tbsp Onions, raw, 2 cup, chopped Garlic, 2 tsp Sweet potato, 2 cup, cubesCelery, raw, .5 cup, diced *Tomatoes, red, ripe, canned, whole, no salt added, 1 can *green bell pepper, .75 cup *Chickpeas (Garbanzo Beans) Mature Seeds - Cooked without salt, 1.5 cup Water, tap, 3 cup Paprika, 2 tsp Turmeric, ground, 1 tspBasil, 1 tsp Cinnamon, ground, dashPepper, red or cayenne, dash1 Bay Leaf*Kikkoman low sodium soy sauce, 1 tbsp (optional- omit for very low sodium)
Directions
Saute onions, garlic, celery and sweet potatoes in olive oil about 5 minutes. Add all other ingredients except tamari (soy sauce). Simmer on stove until cooked (about 45 min.) or throw in crock pot and cook until tender. Add 1 T. low sodium soy sauce right before serving if using. Without soy sauce= 37.5 mg. sodium per serving. With soy sauce= 181.2 mg. sodium per serving.
