Grandma Salazar's Posole

1.5 lbs beef stew meat1.5 ibs pork stew meat2-28 oz can of red enchilada sauce2-19 oz cans of white hominy,drained1-15oz can of white hominy,drained1 bay leafchopped freash cilantrolemon wedges
cut excess fat from meat and cube about 1.5"x1.5"
brown all the meat together
add the enchilada sauce and bay leaf and bring to a boil
cover and simmer for 60 min
add hominy and simmer an additional 20 minutes
let stand for 10 minutes
serve with cilantro and lemon wedge if desired
