Breakfast Burrito Filling

Ingredients
Egg Mix: 1 Cup Egg substitute, liquid (Egg Beaters)4 Large Eggs1/4 Cup Milk, 1%Olive Oil, 1 tbsp (remove)1/2 Cup chopped Green Peppers1/2 Cup Chopped Onions1 Cup chopped fresh Spinach1 small diced Tomato 2 slices extra lean Ham1/4 Cup shredded texmex cheese blend.
Directions
Beat eggs, milk and add cheese. Set aside.

Heat green peppers and onion in a pan or skillet with olive oil. Cook on high until vegetables are translucent.
Add Ham, tomato and spinach for 2 minutes or until spinach is soft and withered.

Add egg mixture and cook on medium high until scrambled eggs are ready.

Add to tortillas and serve with cottage cheese if desired.
