Soup - Broccoli-Cauliflower Cheese Soup

Ingredients
2 lbs. Frozen Broccoli-Cauliflower Mix (or other vegetables)1 Can Rotel Tomatoes - mild (you can use spicier if you prefer)2 Cans (4 Cups) Chicken Broth10 oz Velveeta Cheese (cubed)
Directions
1. Combine all ingredients except cheese
2. Bring to a boil.
3. Cook until vegetables are tender.
4. Reduce heat to simmer
5. Add cheese, stirring occasionally.
6. Continue to cook until cheese is completely melted.

Yield: Approximately 17 Cups

    I mash the vegies when soft and use 4 cans of fatfree, low salt broth. I don't know that you can get 17 cups from 2 cans of broth. Very good, even for people who don't like vegies, when they are mashed. - 1/7/11
