Ingredients
2 cansblack beans 1.5 cupsfrozen cornfresh cilantro2 tomatoes, diced1/4 cup olive oiljuice from 2 limessaltpeppergreen onion
Directions
Place all ingredients other than olive oil and lime juice in a bowl and mix well. In a separate bowl, mix olive oil and lime juice. Pour lime juice and olive oil mixture over salad and mix well. Serve

    I have made this with canned corn but I didn't think to use frozen. It is delicious. I am going to make it with frozen corn which has got to be a healthier choice than canned corn. Also, adding the tomato and green onion will make it even healthier and tastier! - 11/12/10
