Dara's Tuna/Salmon Cakes

Tuna, Starkist Chunk White Albacore in Water (2 5 oz. cans)Salmon, canned, Bumble Bee wild alaska salmon (7 svgs=14.75oz can), Saltine Crackers (Saltines), .5 cup, crushed Black Olives, 5 jumbo*Kale, cooked, boiled, drained, with salt, .25 cup, chopped Cabbage, savoy, fresh, .25 cup, shredded Butternut Squash, .25 cup, cubes Onions, raw, 1 medium (2-1/2" dia) Honey Mustard, 3 tsp Olive Oil, .5 cup
Makes 9 large patties
Crush saltines
Beat eggs before adding to mixture
Dice onion
Finely chop cabbage and kale
Dice squash
*Pan fry in olive oil. Do not add oil to recipe.
Drain salmon and tuna
Combine ingredients in a bowl. Take a fistfull of the mixture, and form it into a pattie -- hamburger sized. Panfry for about 8 minutes in approximately 4 tbsp. of olive oil on each side, until golden brown. Serve hot. Makes about 9 patties.
