cooking spray to coat 2 cookie sheets1/4 cup margarine, softened2/3 cup sugar1/2 cup sugar (may substitute Splenda equivalent) 1/2 cup buttermilk1 tsp vanilla extract2 large egg whites (may substitute 1 large egg)1 1/2 cups all- purpose flour1/2 cup unsweetened cocoa1 tsp baking soda1/4 tsp table salt1 tbsp powdered sugar
Preheat oven to 350 degrees F. Coat 2 cookie sheets with cooking spray
Cream margarine; add granulated sugar and beat at medium speed until blended.
Add buttermilk, vanilla and egg whites; beat well.
Combine flour, cocoa, baking soda and salt; add to margarine mixture and mix well.
Drop dough by tablespoonfuls 2 inches apart onto cookie sheets.
Bake for 7 to 8 minutes.
Remove from pan and cool completely on wire racks.
Sprinkle with powdered sugar.
If you get 24 cookies out of your batch you will have a cookie with only 48 calories.
