Mexican Chicken Soup

Ingredients
1 medium Sweet Onion3 cloves of Garlic minced2 tbl EVOO1 can Ro Tel Original1 can black beans1 can sweet corn1 can fire roasted green chiles2 tsp cumin2 tsp chili powder1 tbl onion powder2 tsp garlic powders&p to taste2 tbl fresh chopped cilantro3 - 4oz chicken breasts, grilled and cut
Directions
Add EVOO to soup pot over med/high heat
Add garlic - stir about 2 minutes
Add onion - stir to coat with oil, cook about 5 min, until translucent
Add whole can of Ro Tel - reduce liquid about 10 minutes
Add can of drained green chiles
Add can of drained corn
Add can of 1/4 of juice from can of black beans
Add rinsed/drained black beans
Add box of Chicken broth
Add Spices, except cilantro, S&P to taste
Simmer 30 minutes
Add Grilled/cut up Chicken long enough to warm through prior to serving add cilantro
(a few tortilla slices & a small dollop of sour cream sprinkled with cumin on top is pretty & delicious! )
1 cup per serving.... makes about 12 cups depending on how much you simmer & reduce
