Hearty Vegetable Chili with Meat

Ingredients
1 sweet onion, chopped1 green pepper, chopped1 glove of garlic, crushed1 tsp olive oil1 lb extra lean ground beef2 T chili powder1 tsp cumin1/2 tsp cinnamon1 cup red wine2 14 oz. cans diced tomatoes2 15 oz. cans of beans (I use one light kidney, one dark kidney), drained2 bay leaves2-3 cups vegetable broth1 cup diced zucchini1 cup sliced mushrooms1/2 cup sliced green olives
Directions
1. Heat olive oil in dutch oven or large soup pot. Add garlic, onion and pepper and saute over med-high heat for a few minutes.
2. Add ground beef and all the spices except bay leaves. Brown meat.
3. Add red wine and drive off alcohol.
4. Add tomatoes, broth, beans and bay leaves. Simmer for 10-15 minutes.
5. Add remaining ingredients (zucchini, mushrooms, green olives) and cook until they appear done (about 10 minutes).

Makes 16 1-cup servings. Enjoy!
