Chicken flavored tofu tortillas

Tofu extra firm - 1 blockA large yellow bell pepperA medium red bell pepper2 cups diced mushrooms1 cup of chopped broccolishredded cheddar cheesechicken brothTumaro's garden vegetable tortillas
Heat a cup of chicken broth in a sauce pan and about 1/4 a cup in a seperate skillet.
Add crumbled up tofu to the chicken broth in the sauce pan, along with chopped broccoli and mushrooms.
Sautee the bell peppers seperatly in the skillet (I do this because of the diabetic issue of not being able to eat cooked bell peppers, or only in very small amounts)
Add a dash of salt, lots of roasted garlic, and some chives to flavor... or whatever spices you may prefer.
Cook for aprox half an hour until the veggies have lost most of their crunch, stirring occassionally.
Layer the tortillas in cheddar cheese then add the roasted peppers and tofu/mushroom.broccoli mix and fold.
This recipe makes about 8 large tortillas.
