Five-Grain Whole Wheat Bread

Ingredients
* 2 cups Whole Wheat Flour * 1 cup Kamut whole grain flour (or sub white whole wheat) * 1 tablespoon vital wheat gluten * 1 cup Bob's Red Mill Five Grain cereal * 2 T ground flax meal * 1 teaspoons salt * 1 tablespoons sugar * 1 packet yeast * 1/4 cup Baker's Special Dry Milk or 1/3 cup nonfat dry milk granules * 1 1/4 cups lukewarm water * 2 tablespoons vegetable oil
Directions
1) Combine all the ingredients in a large bowl (stand mixer preferable but not necessary). Mix and knead with mixer or by hand until the dough is smooth, adding additional water or flour as needed.

2) Place dough in a lightly greased bowl, cover, and let rise for about 1 hour.

4) Place the loaf in a lightly greased loaf pan, cover, let the loaf rise about 40 to 60 minutes, or until rises about 1" over the rim of the pan.

5) Preheat the oven to 350°F.

6) Bake the bread for 35 to 40 minutes until golden brown.

6) Remove the bread from the oven, remove it from the pan, cool on a rack.

Yield: 1 loaf.
