Gluten-Free Granola

Dry Ingredients:3 cups gluten-free rolled oats (I used Bob's Red Mill)1 cup sweetened coconut flakes1 tsp ground cinnamon1/4 tsp salt (I used sea salt)Liquid Ingredients1/3 cup honey1/4 very hot water1/4 cup canola oil1 tsp pure vanilla extract
Preheat oven to 300'. Line baking sheet with parchment paper.
In large bowl, combine all the dry ingredients.
In a small bowl, combine all the liquid ingredients -- stirring until honey dissolved. Pour over dry ingredients mix until combined.
Put granola on cookie sheet in thin layer.
Bake 15 min and stir. Bake for another 15 min. Repeat until browned how you want it.
Let cool for 20 min.
Store in refrigerator for up to 2 wks.
