Easy Potatoes

Ingredients
10 oz Yukon Gold Potato (about 2 potatoes)2 tbsp Extra Virgin Olive OilSalt and pepper to taste
Directions
Pre-heat oven to 400 F

Slice potatoes and then quarter the slices

Place potatoes on a piece of foil, drizzle on the olive oil, sprinkle on pepper and salt.

Fold into a tin foil packet and place on cookie sheet. Bake for 20-30 minutes.

Makes about 2 servings (1 serving= about 3/4 cup)

Try adding onion and/or carrots for a variation!
