Cod and Shrimp Stew

Ingredients
Garlic, 4 clovesGreen onions, 4Olive Oil, 1 tbspHunts No Salt Added Diced tomatoes, 14.5 oz. can, 14.5 ozPepper, black, .5 tspPeppers, sweet, orange, fresh, 1 tbspPeppers, sweet, red, fresh, 2 tbspZucchini, baby, 1 medium sliced and quarteredPortabella Mushrooms, 100 grams, choppedAlmonds, 0.33 cup, crushedSpinach, fresh, 2.5 cupShrimp, cooked, 12 largeCod (fish), 16 ozChicken Broth, Low sodium 2.5 cups
Directions
1)Heat olive olive and saute garlic and green onion.
2)Add tomatoes and pepper and bring to boil.
3)Finely chop red and orange peppers and add to stew.
4)Add zucchini, portabella mushrooms, almonds and broth and simmer.
5)Add spinach and wilt.
6)Add fish and cook till opaqe (about 4-5 minutes).

May serve with garlic wheat bread or brown rice.

Makes about 6 servings.
