Vegetarian Lasagne

Ingredients
* Beans, red kidney, 2 cup * *Barilla Lasagne Flat No Boil Noodle, 5 oz (six pieces) * Onions, raw, 1 large * Garlic, 2 tsp * Olive Oil, 1 tbsp * *Spaghetti/Marinara Sauce (tomato sauce), 2 cup * Oregano, ground, 2 tsp * Basil, 1/2 tbsp * Parsley, 2 sprigs * Salt, 1 tsp * Mushrooms, fresh, .5 cup, pieces or slices * Peppers, sweet, red, raw, sliced, 1 cup * Mozzarella Cheese, part skim milk, 12 oz * Cottage Cheese, 2% Milkfat, 2 cup (not packed) * Parmesan Cheese, grated, .5 cup
Directions
Saute mushrooms. Set aside. Saute onion, garlic, peppers until soft. Add spices and tomato sauce. Simmer for 20-30 min. Add beans and mushrooms to vegetable mixture. Build lasagne: Noodles on bottom. 1/3 vegetable mixture, followed by 1/3 each cheese. Do two more layers ending with Parmesan. Bake covered at 350 for 40 min. Uncover for 15-20 more minutes.
