Honey Whole Wheat Bagels

Ingredients
4 cups of whole wheat flour, plus up to 1/2 cup more1 tsp salt2.5 tsp or 1 pkg. yeast3 T honey + 1 T for the boiling water1 1/2 cup warm water
Directions
Makes 12 bagels.

Stir together 2 cups of flour as well as the salt and yeast. Add in the warm water and 3 T honey. Gradually add remaining flour.

Knead until the dough is smooth and elastic.

Cover the dough and let it rest for about 10 to 15 minutes.

Divide the dough into twelve parts.

Set a timer for 20 minutes and begin shaping each piece of dough into a nice ball. Pull the dough apart in the middle to create about a two inch hole.

Lay it onto a buttered or greased pan, cookie sheet, or baking stone. Continue until all the bagels are formed. Let the bagels sit until the timer goes off. Don't worry if they aren't "bagel-sized", they will puff up in the broiler.

Meanwhile, bring a big pot of water to a boil. Stir in the remaining 1 T honey.

After the timer goes off, turn the broiler on in the oven. Broil the bagels for 2 minutes on each side. Don't let them get crispy!

Put a few bagels into the water (give them space, as they will grow a little more), turn down the heat and
simmer for seven minutes, turning the bagels over once. Then let the bagels drain on a towel for a few minutes.

Bake at 375° for 25-30 minutes or until the tops are golden brown.
