Vanilla cupcakes

Ingredients
Yogurt, plain, low fat, 0.5 cup Milk, nonfat, 2/3 cup Applesauce, unsweetened, 0.25 cup *Canola Oil, 3 tbsp Granulated Sugar, 0.75 cup Vanilla Extract, 1.5 tbsp Butter extract 1 tsp.*coconut extract, 1 tbs*Cake flour, 1.25 cup + 1 tblsp. Cornstarch, 0.125 cup Baking Powder, 0.75 tsp Baking Soda, 0.5 tsp Salt, 0.25 tsp
Directions
In a large bowl, whisk the yogurt, milk, apple sauce, and extracts. Sift the flour, conrstrach, baking soda, baking powder, and salt on top of the wet ingredients. Mix. Using a 1/4 cup measure, scoop the batter in the muffin tins.

Bake at 350 degrees from approx.22 minutes. Add a low-fat cream cheese frosting if you want to do them up.
