Pumpkin Oatmeal - Jessica Seinfeld's Deceptively Delicious

1 c. nonfat milk1/4 firmly packed light or dark brown sugar1/4 cup canned pumpkin (or you can use sweet potato puree)1 tsp. vanilla extract1/4 tsp. pumpkin pie spice or cinnamon1 c. old-fashioned oatsOptional add-ins:2 tsp. natural peanut butterdried fruit and nutspure maple syrup

Combine milk, sugar, pumpkin, vanilla and spice. Bring to a gentle boil and stir in oatmeal. Reduce the heat and simmer for 2 to 3 minutes, until the oatmeal is soft and creamy.
You can add 2 tsp. natural peanut butter at that point, if you wish. I also like to cook in raisins. But I kept the nutritional data without these two add-ins.
Jessica also suggests you can add maple syrup.
Variation: Add 2 tbsp. sweet potato to 1 c. oatmeal. Add 1/4 c. milk and 1/4 c. water. Add cinnamon to taste and top with maple syrup or brown sugar.
