Roasted Eggplant Mash

Ingredients
1 med eggplant1 medium onion4-5 lg Roma tomatoes4-5 cloves of garlic4 tbsp olive oil (Approximately)
Directions
Peel eggplant and cut into approx 1 inch cubes. Rough chop onion into about 1 inch pieces. Quarter tomatoes. Leave garlic cloves whole. Combine all vegetables Drizzle liberally with olive oil and toss. (you may wish to use more or less). Spread mixture onto a greased cookie sheet( I use Pam Spray) and bake for 60minutes at 400 degrees or until vegetables are soft enough to mash with a fork.
Transfer vegetable to a large serving dish and mash with a fork. Serve warm or cold with toasted pita bread.
