Pistachio delight

Ingredients
1 16 oz tub of non fat cottage cheese1 8 oz tub of Cool Whip Free1 8 oz can of crushed pineapple (drain as well as possible)1 package of Instant fat free-sugar free pistachio pudding
Directions
Mix cottage cheese, cool whip and pudding mix in a bowl - mix well.

make sure to drain pineapple as best you can. Add to bowl and mix in.

Chill or serve immediately.
Makes about 12 1/2 cup servings

    I might play around with the ingredients a bit more next time, but any delicious way to get some protein is fine by me! Suggestions for maybe a creamy FF cottage cheese (mine was way to clumpy) and less pistachio for that saccaharin sweetness (personal pref!) - 11/13/07
