Oatmeal Carrot Cookies with Raisins

Carrots - 3 cup, gratedOat Flour - 2 cupLong Cooking Oatmeal - 1 cupVegetable Oil - 1 cupEggs - 4 Baking Soda - 2 tspCinnamon - 2 tspSalt - 1 tsp Applesauce, unsweetened - 1 cup Raisins - 2 cup (not packed)
Preheat oven to 350
Combine:
grated Carrots
Egg
Vegetable Oil
Unsweetened Applesauce
In another bowl combine:
Whole Wheat Flour
Oat Flour
Whole Oats
Baking soda
Cinnamon
Salt
Raisins
Stir dry into wet to combine. Add raisins. (or walnuts - nutritional information is for raisins)
spoon, by measured tablespoon, onto baking sheet lined with parchment paper (I use one of the air bake pans) and bake for 15 minutes
Cool on a wire rake, store in an airtight container or in zip close bag in freezer for longer period of time.
