Ingredients
2 large eggs2 tbsp lowfat cottage cheese1 tbsp turkey bacon bits1 tbsp unsalted butter
Directions
In a frying pan, melt butter and add turkey bacon bits and cook until crispy.

In a separate bowl, mix eggs and cottage cheese.

Pour eggs into frying pan with bacon bits and scramble with spatula until eggs are dry and fluffy.

Makes 1 serving.

    Really good. I opted for olive oil spray instead of butter but I don't think it changed anything taste wise. I love cooking with cottage cheese! - 4/3/11
