Wild rice with dried fruit and nuts

Thinly slice 4 scallions, separating green and white parts. In medium saucepan, heat 1 TBS extra virgin olive oil over medium high heat. Add scallion whites and cook, stirring often, until soft, 3 mins. season with salt and ground pepper. Add 1 1/4 c. wild rice/blend (discard seasoning packet) and cook according to package instructions.
Meanwhild, in a small saucepan, combine 2 TBS red wine vinegar, 1/2 c. dried cherries or craisins, and 2 TBS water. Bring to a boil over medium high heat. Reduce to a simmer and cook until vinegar is almost absorbed, 3 mins. Transfer to a bowl and add rice mixture, scallion greens and 1/2 c pecans, toasted and chopped. Stir well to combine and season to taste with salt/pepper. Serve warm or at room temp. Serves 4.
