1 cup flour1 cup whole wheat flour1/3 cup packed brown sugar2 1/2 teaspoons baking powder1 teaspoon apple pie spice1/4 teaspoon salt2 eggs1 cup lowfat buttermilk2 tablespoons canola oil3/4 cup shredded apples with peels2 tablespoons chopped pecans
Preheat oven to 375. Lightly coat twelve 2 1/2 inch muffin cups. In a large bowl mix together flours, sugar, baking powder, spices, and salt. In a medium bowl beat lightly eggs. Mix in buttermilk and oil. Add egg mixture all at once to the flour mixture. Stir until moistened, batter will be lumpy. Fold in apples and spoon into muffin cups. In a small bowl mix together 1 tablespoon of brown sugar and pecans. Sprinkle on top of muffin batter. Bake 18 to 20 minutes until an inserted toothpick comes out clean. Cool on a wire rack.
