Mindy's Simple Black Bean Soup

1/4 cup chopped green onion1 tsp. minced garlic (in a jar)2 cups chicken broth2 15oz. cans black beans2 tbsp. tomato paste1 15oz. can diced tomatoes1 4oz. can diced green chilies1 tsp. ground cumin1/2 tsp. saltfreshly ground black pepper to tasteLight Sour Cream and Reduced Fat Mexican blend cheese
Spray a soup pot generously with nonstick cooking spray and heat to medium on the stove. Add green onions and garlic and stir. Cover pot and let the green onions and garlic cook for 2-3 minutes. Add chicken broth and remaining ingredients. Heat over medium high heat, stirring occasionally, until boiling. Reduce heat to low and simmer, covered, for 30 minutes. Garnish with sliced green onions, reduced fat mexican blend cheese and sour cream if desired.
