Eggless Egg Salad from Tassajara

12 oz. firm tofu3 scallions, minced1 med. carrot, coarsely grated1 stalk celery, finely minced1/3 c. toasted sunflower seeds1 tsp. grated gingerTofu Mayonnaisesalt and freshly-ground peppertamari sauce
Cut the tofu into a bowl in 1/2" cubes. Add the scallions, carrot, celery, sunflower seeds, and ginger and then mix gently. Add the Tofu Mayonnaise, season to taste and mix once again. Chill until ready to serve.
