Mexican Pork & Rice

1.75 lb pork loin, all visible fat removed2 cloves garlic, minced1 small onion, chopped1.5 C brown rice2.5 C chicken broth1 15 oz can black beans, rinsed and drained1 15 oz can diced tomatoes with green chilies1 15 oz can diced tomotoes10 oz pkg corn, frozen1 C salsa *(mango with peach)1 tsp chili powder1 packet fajita seasoning*I used mango with peach salsa because that is what I had on hand. You could use whatever variety you would like, it may change the nutrition info though.
Cut pork into bite size chunks. Saute pork, garlic and onions in skillet until pork is browned and onions softened. In a large bowl combine remaining ingredients with pork mixture. Poor into a 4qt casserole dish that has been sprayed with non stick spray. Bake at 350 for 60-70 minutes.
Makes 12, 1.25 Cup servings
Makes a very large amount, recipe could be halved. Would be good for a potluck.
