Preheat oven to 375.
wrap beets in foil and bake for 90 min.
cool, peel, and slice
place farro and water in pot and bring to a boil. Reduce heat and simmer for 25 min.
drain and cool farro, stir in salt.
on a platter, layer watercress, farro, red onion, and beets. Sprinkle with cheese.
To make dressing, combine salt, vinegar, oil, yogurt, poppy seeds, agave, pepper and garlic.
