Curried Split Pea Soup

2 Tbsp Olive Oil12 Baby Carrots, Chopped3 stalks Celery, Chopped1 small Onion, Chopped3 cloves Garlic, Chopped1 Tbsp Curry Powder (or more)1 Bag Yellow Split Peas (2-1/2 cups)6 Cups Vegetable Broth2 tsp Salt (or to taste)
Heat Olive Oil in soup pot. Add carrots, celery, onion, garlic and curry powder. Cook for 5-10 minutes over medium heat until lightly browned.
Add broth, split peas and salt. Bring to a boil, reduce heat and cook for 1 to 1-1/2 hours until split peas are soft. Add water if needed, and more curry or salt if desired.
