Murphy's Casserole

Ingredients
2 tbsp all-purpose flour1 tsp chopped fresh parsley1 tsp chopped green onion (or chives)dash pepper4 medium potatoes, peeled and sliced lengthwise into thin slices2 cups diced turkey loaf (or lean ham)1 leek (white & light green parts only), thinly sliced1 cup thinly sliced onions1 cup shredded cheddar cheese1 can Healthy Request cream of mushroom soup (or cream of celery)
Directions
1. Preheat oven to 375F .In a small bowl, combine flour, parsley, green onion and pepper.

2. In a prepared casserole dish, layer half of the potatoes, all of the leek and onion, all of the turkey and half of the flour mixture half of the cheese.
Top with the other half of the potatoes and the remaining flour mixture. (reserve the remaining cheese)
Combine soup with enough water to make 2 cups and pour evenly over the casserole. Sprinkle to taste with paprika and parsley.

3. Cover and bake in preheated oven for 65 minutes until potatoes are just fork-tender. Uncover and add reserved cheese. Bake, uncovered, for 15-20 minutes or until cheese is slightly browned, potatoes are tender and the center is hot. Let cool for 5 minutes.

    I make a similar dish, but feel that you can omit the flour. I make it with Cream of Celery Soup and it has been a long time favorite with family and friends. - 11/20/10
