Shrimp & Snapper Ceviche

Ingredients
6 oz red snapper, cut into small pieces8 oz small or medium shrimp (remove shells, tails and veins)4 tbsp fresh or 2 tbsp dried cilantro1 tsp each salt and fresh ground pepper1 cup of fresh lime juice1/4 tsp cayenne pepper or red pepper flakes2 green onions/scallions, finely minced1 tsp fresh grated ginger
Directions
Mix all ingredients together in a glass bowl, set aside and allow to sit for 10-15 minutes in a cool place, or place back in refrigerator.
The lime juice will "cook" the fish and shrimp.
I serve this with a fresh salad and a nice slice of bread. We mainly eat this as an appetizer, but many eat this as a full entree for lunch or dinner.
