Introduction

Quick and simple Spanish seafood dish that can be added to and adapted to suit your needs by adding vegetables, garlic, herbs etc you can bulk it out add colour and flavour all at once. We usually serve with a green salad on the side. Quick and simple Spanish seafood dish that can be added to and adapted to suit your needs by adding vegetables, garlic, herbs etc you can bulk it out add colour and flavour all at once. We usually serve with a green salad on the side.

Ingredients

    150g Roast chicken thighs cubed
    50 g uncooked cod fish cubed (defrosted if frozen)
    525g Tesco Seafood Selection (defrosted if frozen)
    60g onion chopped
    500g Uncle Bens Chicken rice
    15 ml Sunflower oil

Directions

Follow the instructions on the Uncle Bens rice (we use the microwave method). Fry the onion in the oil until transparent, add the cooked chicken, simmer for 2 minutes. Mix the cooked rice in with the chicken and onion and simmer for 1 minute. Finally add the fish and seafood mixing it in well, this allows all the different flavours to merge. You may need to add a drop of water at this point if the food is looking stodgy. Put the lid on and simmer for 20 minutes. Serve immediatly. Serves 4.

  • This looks good though I suspect the portion size was not input correctly which likely affected the calorie count which I presume is closer to 350/serving. I like this recipe b/c it is so easily adaptable (i.e., lo/no-cal additions of spices -- turmeric or saffron(!)). I love seafood paella - 1/17/13
