Feta Zucchini pancakes

Ingredients
1 cup shredded zucchini1/4 cup bread crumbs2 green onions, chopped1 egg3 tbsp parsley (fresh would be best)1 tbsp snipped fresh dill1 garlic clove1/4 cup light feta cheese, crumbled3 tsp olive oil
Directions
Makes 8 pancakes, 2 pancakes = 1 serving

In a sieve drain shredded zucchini, squeezing to remove excess liquid. Pat dry.
In a small bowl, combine the zucchini, bread crumbs, onions, egg, parsley, dill, garlic and cheese.

Heat 1 tsp oil in a large nonstick skillet over medium-low heat.
Drop batter by heaping tablespoons into oil; press lightly to flatten.
Fry in batches until golden brown on both sides, using remaining oil as needed.
