Banana Polenta

1/2 cup corn grits (polenta)1 cup soy milk1 cup water1-2 teaspoons salt1 ripe banana, sliced1 tablespoon maple syrup (optional)1 tablespoon Smart Balance Light (optional)
Pour soy milk and water into a saucepan with 1-2 teaspoons salt. Allow to come to a boil. Pour in the dry corn grits. Whisk constantly for the first 5 minutes as the grits start to thicken. Turn down the heat to a simmer and whisk in the banana. Continue to cook 10-15 more minutes, stirring occasionally, until the grits are fully cooked and thickened. It tastes great the way it is, but if you like, you can add maple syrup and Smart Balance for extra sweetness or richness. This recipe makes two 1-cup servings.

Rich & delicious! But using the same ingredient quantities, my per-serving calorie count came out significantly higher... ?? Maybe the maple syrup and smart balance are not included in the nutrition info here? That might account for the difference.
