Stuffed pork tenderloin

Ingredients
pork tenderloin fiteted1tbsp grapeseed oil1 tbsp garlic10 oz bag of fresh spinac1 red pepper1 yellow pepper6 oz reduced fat feta cheeseadobo seasoning
Directions
1. Filet pork tenderloin so it makes one flat strip
2. Sautee peppers and onions when they soften add spinach and garlic and sautee for 2 more minutes
3. Sprinkle feta on flat tenderloin,
4. Spread sauteed vegetables on top of feta.
5. Roll pork into a log and place in a greased 13x9 inch pan.
6. Cook till thermometer reads 165 degrees then let rest for ten minutes.
