Candied Yams and Marshmallows

Ingredients
8 cups largely cubed yams4 Tbsp Smart Balance Light1 C Dark Brown Sugar1.5 C mini marshmallows
Directions
Boil yams until barely soft
Peel yams and cut them into large cubes

in a separate pan, melt 4 T smart balance and add cup of dark brown sugar. Add about 1/4 cup water slowly. Keep whisking to ensure sugar doesn't become grainy.

Add yams and thoroughly coat. Let simmer for 10 minutes

Place in oven safe dish and lightly cover with mini marshmallows.

Oven cook until marshmallows are lightly browned.
