Pretty Paleo Pumpkin Bars

Ingredients
2 C. almond flour1 1/4 tsp pumpkin pie spice2 tsp baking powder1 tsp baking soda1 tsp liquid stevia1/4 C. walnut oil1/2 C. brown sugar (unpacked)6 egg whites1 can (15 oz.) pumpkin pie filling1 C. carrots, finely shreddedFirst: Mix almond flour, pumpkin spice, baking powder & baking soda together Second: In a seperate bowl, combine brown sugar, stevia & oil. Add pumpkin pie filling, egg whites and carrots.Once both mixtures are thoroughly mixed, combine the two.spread evenly into pans. It may be desirable to, FIRST, line pans with parchment paper.
Directions
Preheat oven to 350
Grease (2) 11 x 7 pans, or your preference

Bake for approximately 25 minutes (ready when fork/toothpick/cake tester comes out clean, at center)

Result in texture is much like pumpkin pie (ooey gooey goodness), take care when slicing. Best to slice when cooled a bit.

    This has a lot of sugar added to it. Have you made it without sugar? If so, how is it? I am looking for desserts and this sounds interesting (except the sugar). - 12/21/10
