Leftover Turkey Hash

* *Sweet Potato, baked, 2 cup (remove) * *whole onion, raw (1 onion), .5 serving (remove) * Turkey (light meat), 2 cup, chopped or diced (remove) * *Extra Virgin Olive Oil, 2 tbsp (remove)
Dice a fresh sweet potato in 1/2 inch cubes and saute in olive oil with 1/2 of an onion. When sp's are cooked through add in two cups diced white meat turkey. Heat through. Season at will, sprinkle with grated parm and serve.
