Second Day Thanksgiving Casserole

Ingredients
8 ounches leftover turkey, chopped1-1/2 cups leftover or fresh made turkey gravy2 cups mashed potatoes1 can whole kernel corn, drained2 cups prepared stove top stuffing
Directions
Spray a 3 quart casserole dish with non stick cooking spray. spread potatoes in bottom of dish. place turkey on top of potatoes. pour gravy over turkey. top gravy with the corn. spoon the stuffing evenly over the top of the corn. cover with foil & bake in 350 degree oven for 30 minutes, remove foil & bake another 15 to 20 minutes til top is lightly browned & dish is heated through to 160 degrees on a meat thermometer. Makes 8 3/4-cup servings
