Tropical Mango-Jicama Chicken Salad

1/2 cup red onion, thinly sliced1/4 cup fresh lime juice1 TBSP olive oil3/4 tsp table salt1/2 tsp ground cumin1/4 tsp hot pepper sauce2 1/4 cups jicama, diced1/2 pound cooked boneless, skinless chicken breast, shredded1 medium mango, cut into 3/4 inch cubes1/2 cup cilantro, fresh, chopped
In a large bowl, combine onion, lime juice, oil, salt, cumin and hot pepper sauce; let stand 10 minutes, tossing occasionally, until onion starts to wilt.
Add diced jicama, shredded chicken, cubed mango, and cilantro; toss to mix and coat. Yields about 1 1/4 cups per serving.
