Sophie Dahls 'Bircher Muesli'

Ingredients
4 apples, peeled and cored2 tbsp of lemon juice200g oats500ml plain yogurt80g raisins50g raspberries30g chopped walnuts
Directions
Serves 4-6 (nutrition value for 4)

1) Grate the apples coarsely and put in a mixing bowl. Pour the lemon juice over the apples. This will stop them browning.

2) Mix all the other ingredients in and stir with a spoon. Leave it covered over night in the fridge. When you come to it the next day, the fruit will have become plump and swollen and the oats will have absorbed the yogurt.

TO SERVE:
Sophie recommends either serving it with more yogurt and drizzled with honey. I agree!
