Leftover Thanksgiving Turkey Chili

1 cup onions, chopped1 can diced green chilis1 tbsp extra virgin olive oil1 can diced tomatoes1 can cannellini beans1 can black beans2 cups shredded turkeyDash of cayenne pepper (optional)2 tsp cumin1 tsp chili powder
Heat a 2-quart pan with olive oil and sauté the onions and diced chilis. Once the onions soften, add the tomatoes with the liquid, as well as the two cans of beans with their liquid. Let the mixture simmer a few minutes, then add the shredded turkey. Add the spices, then allow the chili to simmer for 30 minutes.

Yeah.. I had not had luck with turkey chili before. I used just a can of chickpeas, since I had them open. I used no salt tomatoes and didn't use the water from the beans, to reduce sodium. Filling and a great use of leftover turkey. I will make sure not to add too much red pepper next time. - 4/12/12
