Directions
Saute' veggies in olive oil, add beans, tomatoes, broth, quinoa and simmer for at least 40 minutes if not longer. Spice added were cinnamon, nutmeg, lite salt, pepper, and a bay leaf. Buy low sodium broth and always drain the beans, tomatoes, etc. to cut sodium intake.
