lamb stew with yellow squash

Ingredients
1 lb. lamb1 large carrot1 cup diced oniongarlic1 medium yellow squash1 cup celery diced1 cup artichoke hearts in water1 cup vegetable broth.5 cup white winethyme
Directions
Sautee onion, lamb and garlic in cooking spray. When it's browned, take it out and wipe the pot with a paper towel. Return to the pot with the broth, wine, thyme, celery and carrot. Simmer for about 20 minutes or so, until the lamb is cooked through and tender and the carrots are quite cooked. Then add the squash and artichoke hearts and simmer a bit longer. Adjust seasoning, add thyme, garlic, salt and pepper to taste.
