Easy Baked Lemon Garlic Chicken

Ingredients
3 whole chicken breasts (boneless & skinless)1/2 cup Italian-style bread crumbs2 tbsp margarine (melted)3 tbsp lemon juice1 tsp garlic powdersalt & pepper to taste
Directions
Preheat oven to 400F. Spray a glass baking dish (I used an 8" rectangular pan) with non-stick cooking spray.

Spread bread crumbs on a small plate.

In a small bowl, combine margarine, lemon juice, garlic powder, and salt and pepper. Mix well with a fork.

Take each individual chicken breast and dip it in the lemon-garlic mixture until coated completely. Then, gently place it on the bread crumbs, then flip it over, making sure each side is coated with bread crumbs.

Place chicken into baking dish and bake at 400F for about 30 minutes. Cut each breast into halves and serve.

One serving = 1/2 chicken breast.

Whole breasts can be substituted with tenderloins to make serving size easier to handle.

I served this meal with cheesy garlic mashed potatoes and mixed veggies.
