Chicken gumbo (slow cooker)

Ingredients
2/3 cup flour35 ounces chicken breast24 ounces sausage (cut into 1/2 wheels)28 oz canned tomatoesone onion, chopped or dicedone green pepper, chopped or dicedfour ribs celery, diced6 cloves garlic, diced1 tsp cayenne peppercrushed red pepper (optional)tabasco (optional)
Directions
Makes 12 servings (nutritional purposes)

Dice everything up and put it in the slow cooker. Cook for 6 1/2 to 7 hours.

For the roux--most recipes call for a roux that's flour and oil. You can make it without the oil by cooking the flour until it turns color. You must stir it constantly and take it off the heat quickly. I do this part last and put it right into the slow cooker.

Stir occasionally.
