Cranberry Walnut Sourdough Bread pudding

Ingredients
1TBSP Butter; 2 1/2 cups bread cubes; 1 c Egg substitute; 1/2 c white sugar; 1 tsp vanilla; 2 c scalded skim milk; 1 pinch nutmeg; 2 tsp unpacked brown sugar
Directions
1: Butter a 8x8 pan and preheat oven to 300 degrees F. Prepare a water bath by pouring hot water into a larger pan in the oven.
2: Place bread cubes in the baking dish. In a medium bowl, beat together the egg substitute, sugar and vanilla. Slowly whisk in the scalded milk. Pour over the bread, pushing the pieces down until well coated. Sprinkle with brown sugar and nutmeg.
3: Place pan in water bath. Bake for 50 to 60 minutes or until knife inserted in center comes out clean.
