Eat Clean Rice Pilaf

2 Tbsp avocado oil or olive oil (calculated w/ olive oil)1 yellow onion, peeled and chopped1 fat carrot, peeled and grated2 small, firm zucchini, grated and drained1 clove garlic, passed through a garlic press2 tsp cracked coriander1 cup brown basmatic rice (soak the rice for an hour before using it)2 cups low-sodium chicken or vegetable stock, or water1/4 cup unsalted cashew nuts1 tsp sea salt (if cooking in water)pinch of freshly ground black pepper
1. In a large skillet, heat oil. Add onion, carrot, and zucchini and cook until soft. Add garlic and coriander and cook until garlic becomes fragrant.
2. Drain rice in a fine mess sieve, rinse it and add it to the skillet. Heat through, stirring all the while-about 5minutes.
3. Add stock and bring contents to a boil. Once boiling, reduce heat and cover. Let cook on low heat for 30 minutes or until rice is tender.
4. Once rice is cooked, turn off heat and let pan sit, covered, for 5 minutes.
5. Add nuts, salt and black pepper and fluff with a fork.
6. Serve hot.
