Crock Pot Chicken

Ingredients
2 boneless skinless Chicken Breasts1 onion, peeled and cut in half 3 large carrots, peeled and chunked2 large potatoes, scrubbed and chunked3 stalks celery, chunked into 2 inch pieces2 cups chicken broth or bouillon cubes in water1 tsp rosemary1 tsp poultry seasoningCracked pepper to taste
Directions
1. Place chicken breasts in crock pot, and poke holes randomly to allow seasonings to penetrate.
2. Add potatoes, carrots,celery and onion and pour chicken broth on top
3. Sprinkle with seasonings, adding any to suit your taste as well

Simmer on low for about 3-4 hours until chicken is tender, I leave mine while I go to work for five hours and it turns out great everytime. :)

Makes 4 Servings of a half chicken breast and portion of vegetables. Enjoy!
