Baked Sweet Potatoes

6-8 large sweet potatoes1 stick butter1 cup brown sugar (not packed)1/4-1/2 cup orange juice or apple cider
Boil potatoes in a large stock pot until fork tender.
Allow to cool enough to handle, peel and slice into 3/4" rounds. Place potatoes in 9x13 baking dish.
Bring butter, brown sugar and juice to a boil in a small saucepan. Allow to boil for 7-10 minutes, until the juice cooks down and mixture thickens.
Pour over sweet potatoes. Bake at 400* for 30-45 minutes, until potatoes have browned and sugar has carmelized.
(Potatoes topped with sauce may be refridgerated or frozen for up to 3 months prior to baking - great for preparing ahead of time for Thanksgiving dinner!)
